Two Recipes I Have to Try

One: Mocha Coffee-Late-Morning Booster

Ingredients: Throw in the blender.

  • 1/2 oz dark chocolate, melted

  • 1 Cup pre-brewed coffee, chilled

  • 3/4 cup plain low-fat Greek yogurt

  • 1/2 cup unsweetened almond milk

  • 1 Tblsp stevia

  • 1 banana

  • 2-3 ice cubes

Two: Easy quick breakfast. This came from Blue Bottle, the company that carried the Yemen coffee I mentioned on the last blog post. They say this is their customer's favorite. I'm making it today, so in the morning we'll see.

  • 2 cups rolled oats

  • 2 cups oat milk

  • 1/2 cup dried cherries

  • 1/2 cup dried blueberries

  • 6 Tblsp pumpkin seeds

  • 6 Tblsp. sunflower seeds

  • 2 Tblsp. chia seeds

  • 2 Tblsp. pure maple syrup

  • 1 Tblsp. pomegranate molasses (I haven't found it either. maybe a little honey or brown sugar.)

  • 1 Tablsp. pure vanilla extract

  • 1/4 tsp kosher salt

  • 1/4 tsp freshly ground nutmeg

In a large bowl, mix all the ingredients together. Cover and refrigerate overnight or up to 5 days. Scoop into bowls and serve.
